Description
Sausage Pretzel Bites are delicious snacks made with fresh sausage wrapped in soft pretzel dough, perfect for parties or game days.

- 1 pound fresh sausage (Italian or breakfast sausage)
- 1 cup warm water (110°F to 115°F)
- 2 tablespoons granulated sugar
- 2 teaspoons active dry yeast
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup baking soda
- 1 large egg, beaten
- Coarse sea salt, for sprinkling
Instructions
- In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes, or until frothy.
- Add the flour and salt to the yeast mixture, and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- While the dough is rising, cook the sausage in a skillet over medium heat until browned and cooked through. Drain any excess fat and let it cool slightly.
- Once the dough has risen, punch it down and divide it into small pieces (about the size of a golf ball). Flatten each piece and place a small amount of cooked sausage in the center. Fold the dough over the sausage and pinch to seal.
- In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully drop the pretzel bites into the boiling water in batches, cooking for about 30 seconds on each side. Remove with a slotted spoon and place on the prepared baking sheet.
- Brush the tops of the pretzel bites with the beaten egg and sprinkle with coarse sea salt.
- Bake for 12-15 minutes, or until golden brown. Serve warm with your favorite dipping sauce.
