Description

A delicious dish combining roasted sweet potatoes and savory sausages coated in a sweet and tangy honey garlic sauce.


Ingredients

  • 4 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound sausage links (pork, chicken, or turkey)
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 teaspoon red pepper flakes (optional, for spice)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced sweet potatoes with olive oil, salt, and black pepper until evenly coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer and bake for 20-25 minutes, or until tender and lightly browned, turning them halfway through.
  4. While the sweet potatoes are baking, heat a large skillet over medium heat and add the sausage links. Cook them for about 10-12 minutes, turning occasionally, until they are browned and cooked through. Remove sausages from the skillet and set aside, leaving the drippings in the pan.
  5. In the same skillet, reduce the heat to low and add the butter. Once melted, add the minced garlic, stirring constantly for 1 minute until fragrant but not browned.
  6. Stir in the honey, soy sauce, and red pepper flakes (if using). Increase the heat slightly and cook the sauce for 2-3 minutes until it slightly thickens.
  7. Return the cooked sausages to the skillet, rolling them in the sauce to coat evenly. Let them simmer in the sauce for another couple of minutes.
  8. Serve the sausages on top of the roasted sweet potatoes, drizzling any remaining honey garlic sauce over the dish.
  9. Garnish with fresh parsley, if desired, before serving.

Notes

  • For a spicier dish, add more red pepper flakes.
  • This recipe can be made using your choice of sausage type.
