A delicious dish combining roasted sweet potatoes and savory sausages coated in a sweet and tangy honey garlic sauce.

- 4 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound sausage links (pork, chicken, or turkey)
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 teaspoon red pepper flakes (optional, for spice)
- 2 tablespoons fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, salt, and black pepper until evenly coated.
- Spread the sweet potatoes on a baking sheet in a single layer and bake for 20-25 minutes, or until tender and lightly browned, turning them halfway through.
- While the sweet potatoes are baking, heat a large skillet over medium heat and add the sausage links. Cook them for about 10-12 minutes, turning occasionally, until they are browned and cooked through. Remove sausages from the skillet and set aside, leaving the drippings in the pan.
- In the same skillet, reduce the heat to low and add the butter. Once melted, add the minced garlic, stirring constantly for 1 minute until fragrant but not browned.
- Stir in the honey, soy sauce, and red pepper flakes (if using). Increase the heat slightly and cook the sauce for 2-3 minutes until it slightly thickens.
- Return the cooked sausages to the skillet, rolling them in the sauce to coat evenly. Let them simmer in the sauce for another couple of minutes.
- Serve the sausages on top of the roasted sweet potatoes, drizzling any remaining honey garlic sauce over the dish.
- Garnish with fresh parsley, if desired, before serving.
Notes
- For a spicier dish, add more red pepper flakes.
- This recipe can be made using your choice of sausage type.
