A quick and delicious sheet pan meal featuring Italian sausage and colorful bell peppers.
Ingredients

- 1 pound Italian sausage (mild or spicy, your choice)
- 2 bell peppers (red and yellow), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced bell peppers, onion, and minced garlic. Drizzle with olive oil, and sprinkle with oregano, basil, salt, and pepper. Toss until the vegetables are well coated.
- Arrange the Italian sausages on a large sheet pan, and spread the seasoned vegetables around them in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until the sausages are cooked through and the vegetables are tender and slightly caramelized. You can turn the sausages halfway through for even cooking.
- Once done, remove from the oven and let it rest for a few minutes. Slice the sausages and serve hot, garnished with fresh parsley.
Notes
- Feel free to use any combination of bell peppers.
- This dish can be served with crusty bread or over rice for a complete meal.
