Description

A quick and delicious sheet pan meal featuring Italian sausage and colorful bell peppers.


Ingredients

  • 1 pound Italian sausage (mild or spicy, your choice)
  • 2 bell peppers (red and yellow), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced bell peppers, onion, and minced garlic. Drizzle with olive oil, and sprinkle with oregano, basil, salt, and pepper. Toss until the vegetables are well coated.
  3. Arrange the Italian sausages on a large sheet pan, and spread the seasoned vegetables around them in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until the sausages are cooked through and the vegetables are tender and slightly caramelized. You can turn the sausages halfway through for even cooking.
  5. Once done, remove from the oven and let it rest for a few minutes. Slice the sausages and serve hot, garnished with fresh parsley.

Notes

  • Feel free to use any combination of bell peppers.
  • This dish can be served with crusty bread or over rice for a complete meal.
