Description

Shoepeg Corn Salad is a refreshing summer dish that combines creamy dressing with crunchy vegetables and sweet shoepeg corn.


Ingredients

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons vinegar
  • 1 teaspoon celery seed
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Three 15 oz cans white shoepeg corn, drained well
  • 1 pint cherry tomatoes, halved
  • 2 green peppers, seeded and diced
  • 2 cucumbers, peeled and diced

Instructions

  1. In a small bowl, mix together sour cream, mayonnaise, vinegar, celery seed, salt, and pepper until smooth.
  2. Set the dressing aside while preparing the vegetables.
  3. In a large mixing bowl, combine shoepeg corn, cherry tomatoes, green peppers, and cucumbers.
  4. Pour the prepared dressing over the vegetables and stir until everything is well coated.
  5. Cover the bowl and refrigerate for at least 2 hours before serving.
