Ingredients
Scale
- 1 cup orzo pasta
- 1 lb medium shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 1 cup low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the orzo: Boil salted water in a pot, add orzo, and cook until al dente (8-10 minutes). Reserve 1/2 cup pasta water, then drain.
- Sauté shrimp: In a skillet over medium heat, heat olive oil. Add shrimp and cook for 3 minutes per side until pink and opaque. Season with salt and pepper.
- Add garlic: Stir in minced garlic and sauté for 1 minute until fragrant.
- Create sauce: Pour in lemon juice and chicken broth; simmer briefly to combine flavors.
- Combine orzo: Add drained orzo to the skillet, stirring gently to coat with sauce. If needed, add reserved pasta water for desired consistency.
- Finish: Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add red pepper flakes.
- Adjust lemon juice to taste for a more tangy flavor.
- Can substitute shrimp with chicken for a different protein option.
