Description

A flavorful shrimp quesadilla stuffed with melty cheese and complemented by various toppings.


Ingredients

  • 2 tablespoons neutral-flavored oil (e.g., avocado oil, refined coconut oil, canola oil)
  • 1 small onion, diced (approximately 1 cup)
  • 1 medium bell pepper, chopped (approximately 1 cup)
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • Salt to taste
  • 1 pound raw medium shrimp, peeled and deveined
  • 12 tablespoons fresh lime juice (juice from approximately 1 medium lime)
  • 4 tablespoons butter, plus more as needed
  • 6 10-inch flour tortillas
  • 3 cups shredded cheese (quesadilla cheese, Monterey cheese, or Mexican-style cheese blend, divided)

Instructions

  1. Heat a large skillet over medium-high heat. Add neutral oil and swirl to coat the surface. When hot, add diced onion and chopped bell pepper. Cook for 5 to 6 minutes until onions are translucent and peppers are softened.
  2. Reduce heat to medium and stir in taco seasoning. Add the shrimp and cook for 3 to 5 minutes until shrimp are opaque and slightly curled.
  3. Remove skillet from heat and sprinkle lime juice over the shrimp and vegetable mixture. Stir and set aside.
  4. Heat another skillet over medium heat. Add ½ tablespoon butter and swirl to coat. Place one flour tortilla flat in the skillet.
  5. Spoon approximately ⅓ cup shrimp mixture onto one half of the tortilla and top with ½ cup shredded cheese. Cook for about 90 seconds until the bottom is lightly browned.
  6. Carefully lift the opposite half of the tortilla and fold it over the filling. Press gently with a spatula. Flip the quesadilla and cook for 1 to 2 minutes until the second side is lightly browned.
  7. Sprinkle with salt to taste and transfer to a large plate.
  8. Repeat the process with the remaining tortillas, shrimp, and cheese until all quesadillas are cooked. Serve warm with desired toppings and sides.
