Description

A flavorful one-pan dish combining shrimp and sausage with seasoned rice.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 12 oz andouille sausage, sliced
  • 1 lb large shrimp, peeled and deveined
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 1/4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 green onions, chopped
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned, about 4-5 minutes. Remove and set aside.
  2. In the same skillet, add shrimp and cook for 1-2 minutes per side until just pink. Remove and set aside with the sausage.
  3. Add chopped onion, bell pepper, and celery to the skillet. Cook for 5 minutes until softened.
  4. Stir in garlic and cook for 30 seconds, then add the rice. Cook for 2 minutes, stirring frequently to toast the rice.
  5. Pour in chicken broth, add Cajun seasoning and paprika. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  7. Fluff the rice with a fork, then gently stir in the cooked sausage and shrimp.
  8. Season with salt and pepper to taste. Garnish with green onions and parsley before serving.

Notes

  • Adjust the level of Cajun seasoning to taste for more or less spice.
  • Can substitute shrimp with chicken or other proteins if desired.
