Description

A delicious and creamy Shrimp Scampi Pasta Bake that combines shrimp, linguine, and a rich garlic sauce, topped with cheese and breadcrumbs for a crispy finish.


Ingredients

  • 12 oz linguine or spaghetti
  • 1 lb shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup dry white wine
  • 1 lemon, juiced and zested
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, melt 2 tbsp butter. Add minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  4. Add shrimp, season with salt and pepper, and cook for 2-3 minutes until pink. Remove from skillet and set aside.
  5. Pour white wine into the skillet, scraping up any browned bits. Let simmer for 2 minutes.
  6. Add lemon juice, zest, and heavy cream, stirring to combine. Simmer for another 2 minutes.
  7. Stir in Parmesan cheese, then return shrimp to the pan. Mix in cooked pasta and chopped parsley.
  8. Transfer the mixture to the prepared baking dish.
  9. In a small bowl, mix panko breadcrumbs with olive oil. Sprinkle mozzarella and panko mixture over the pasta.
  10. Bake for 15-20 minutes until golden brown and bubbly. Serve warm.

  • For additional flavor, consider adding a pinch of smoked paprika.
