Description

A delightful and easy Shrimp Scampi Pasta Bake that combines the flavors of shrimp, garlic, and lemon with pasta, topped with cheese.


Ingredients

  • 12 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup dry white wine (or chicken broth)
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste
  • 1/2 cup shredded mozzarella cheese (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil and 2 tablespoons butter over medium heat.
  4. Add garlic and red pepper flakes. Sauté for 1 minute until fragrant.
  5. Add shrimp, season with salt and pepper, and cook until pink and just cooked through (about 2-3 minutes per side). Remove shrimp and set aside.
  6. Deglaze the skillet with white wine, scraping up any bits. Simmer for 2 minutes.
  7. Add remaining butter, lemon juice, and lemon zest. Stir in cooked pasta, shrimp, Parmesan, and parsley. Mix to combine.
  8. Transfer to a greased baking dish. Sprinkle mozzarella (if using) and a bit more Parmesan on top.
  9. Bake for 12–15 minutes until bubbly and lightly golden on top.
  10. Garnish with additional parsley and serve hot.

Notes

  • For a spicier dish, increase the amount of red pepper flakes.
  • Feel free to substitute the shrimp with chicken or vegetables for a different variation.
  • Can be made ahead of time and stored in the refrigerator before baking.
