Description

A delicious and simple sautéed zucchini dish glazed with balsamic vinegar and brown sugar.


Ingredients

Scale
  • 1 cup balsamic vinegar
  • 2 tbsp brown sugar
  • 2 tbsp olive oil
  • 3 medium zucchini, sliced into 1/4” rounds
  • Kosher salt
  • Pepper
  • 1/2 to 3/4 tsp sweet paprika
  • Optional: Black sesame seeds
  • Optional: Dried mint or parsley flakes

Instructions

  1. In a saucepan, combine balsamic vinegar and brown sugar. Boil over medium-high heat, then reduce to medium-low and simmer for about 20 minutes until thickened. Cool for 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add zucchini rounds, seasoning with salt, pepper, and paprika. Sauté for 7 to 10 minutes until soft and golden.
  3. Transfer zucchini to a serving platter and drizzle with balsamic glaze. Garnish with optional sesame seeds and mint flakes before serving warm.

Notes

  • Adjust the sweetness of the glaze by adding more or less brown sugar to taste.
  • Feel free to substitute fresh herbs like basil or thyme for dried options.
