Ingredients

  • 2 cups water
  • 1 cup heavy whipping cream

  • 1 teaspoon dried dill

  • 1/2 teaspoon salt
  • 4 ounces smoked salmon, flaked
  • 1 cup frozen peas
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Fresh dill sprigs (optional, for garnish)

Instructions

  1. Place uncooked penne and water into a 6-qt. electric pressure cooker.
  2. Lock the lid and close the pressure-release valve. Adjust to pressure-cook on high for 6 minutes.
  3. Quick-release the pressure. Carefully open the lid.
  4. Stir in the heavy cream, garlic powder, dried dill, pepper, and salt.
  5. Turn on sauté mode and cook for 2-3 minutes until slightly thickened.
  6. Add smoked salmon, peas, Parmesan cheese, and lemon juice. Stir until heated through and creamy.
  7. Garnish with fresh dill if desired. Serve immediately.
