Ingredients

  • 105 grams egg whites
  • 130 grams powdered sugar
  • 120 grams almond flour, fine ground
  • 2 tablespoons natural cocoa
  • 1/4 tsp cream of tartar
  • 4 tablespoons butter, unsalted
  • 1 1/4 cups powdered sugar
  • 3/4 cups marshmallow fluff
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons cornstarch
  • pinch of salt
  • 1 cup powdered sugar
  • 1 tablespoon milk or cream
  • 1 tablespoon chocolate powder (natural or Dutch)
  • 2 sheets graham crackers
  • 1 tablespoon tiny dehydrated marshmallow bits

Instructions

  1. Chop dark chocolate and place into a large bowl.
  2. Heat cream in a microwave-safe bowl until hot but not boiling, then pour over chocolate and let sit for two minutes.
  3. Mix until chocolate is fully melted and smooth. Let it sit until thickened.
  4. Sift almond flour, powdered sugar, and cocoa powder into a bowl.
  5. Whisk egg whites in a stand mixer on medium speed. Add cream of tartar.
  6. Gradually add granulated sugar, then whisk until stiff peaks form.
  7. Gently fold in the dry ingredient mixture until combined. Stop mixing when batter reaches “flowing lava” consistency.
  8. Pipe batter into 1-inch rounds on a lined baking sheet.
  9. Drop the baking sheet to remove air bubbles and let macarons rest for 30-40 minutes.
  10. Preheat oven to 300°F and bake macarons for 13-15 minutes.
  11. Cool completely before removing from the baking sheet.
  12. Match up shells, dip in melted chocolate, and sprinkle crushed graham crackers before filling.
  13. For Swiss meringue, whisk egg whites and sugar over simmering water until sugar dissolves.
  14. Beat egg whites until stiff peaks form, then pipe around the macaron shell and add ganache.
  15. Use a blowtorch to toast the meringue, then top with a chocolate-dipped shell.
  16. Store assembled macarons in an airtight container in the fridge for 12-24 hours for maturing.
