- 1 tablespoon milk or cream
- 1 tablespoon chocolate powder (natural or Dutch)
- 2 sheets graham crackers
- 1 tablespoon tiny dehydrated marshmallow bits
Instructions
- Chop dark chocolate and place into a large bowl.
- Heat cream in a microwave-safe bowl until hot but not boiling, then pour over chocolate and let sit for two minutes.
- Mix until chocolate is fully melted and smooth. Let it sit until thickened.
- Sift almond flour, powdered sugar, and cocoa powder into a bowl.
- Whisk egg whites in a stand mixer on medium speed. Add cream of tartar.
- Gradually add granulated sugar, then whisk until stiff peaks form.
- Gently fold in the dry ingredient mixture until combined. Stop mixing when batter reaches “flowing lava” consistency.
- Pipe batter into 1-inch rounds on a lined baking sheet.
- Drop the baking sheet to remove air bubbles and let macarons rest for 30-40 minutes.
- Preheat oven to 300°F and bake macarons for 13-15 minutes.
- Cool completely before removing from the baking sheet.
- Match up shells, dip in melted chocolate, and sprinkle crushed graham crackers before filling.
- For Swiss meringue, whisk egg whites and sugar over simmering water until sugar dissolves.
- Beat egg whites until stiff peaks form, then pipe around the macaron shell and add ganache.
- Use a blowtorch to toast the meringue, then top with a chocolate-dipped shell.
- Store assembled macarons in an airtight container in the fridge for 12-24 hours for maturing.
