Instructions
- Preheat the oven to 325℉ and line an 8-inch square baking pan with parchment paper.
- In a large bowl, whisk together melted butter, light brown sugar, and granulated sugar until well emulsified.
- Beat in the eggs and vanilla extract until fully incorporated.
- Sift the all-purpose flour, baking powder, cornstarch, salt, and ground cinnamon over the wet ingredients, then fold gently with a spatula until just combined.
- Stir in the cream cheese chips evenly throughout the batter.
- Pour the batter into the prepared pan. Mix the light brown sugar and cinnamon for the topping, sprinkle generously over the batter, then lightly swirl with a knife for even coverage.
- Bake for 40-50 minutes or until a toothpick inserted in the center comes out mostly clean.
- Remove from oven and allow to cool completely in the pan for about 2 hours to let them set.
- Whisk together powdered sugar, cream cheese, and vanilla extract until thick and smooth.
- Pipe or spread the glaze evenly over the cooled blondies before slicing into 16 portions and serving.
