Description

Deliciously soft blondies topped with a cinnamon sugar mixture and finished with a creamy glaze that melts in your mouth.

  • 2 large eggs, room temperature

  • 6 ounces cream cheese chips
  • 3 tablespoons light brown sugar, firmly packed (for topping)
  • 1 tablespoon ground cinnamon (for topping)
  • ½ cup powdered sugar (for glaze)
  • 1 tablespoon full-fat soft cream cheese (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 325℉ and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter, light brown sugar, and granulated sugar until well emulsified.
  3. Beat in the eggs and vanilla extract until fully incorporated.
  4. Sift the all-purpose flour, baking powder, cornstarch, salt, and ground cinnamon over the wet ingredients, then fold gently with a spatula until just combined.
  5. Stir in the cream cheese chips evenly throughout the batter.
  6. Pour the batter into the prepared pan. Mix the light brown sugar and cinnamon for the topping, sprinkle generously over the batter, then lightly swirl with a knife for even coverage.
  7. Bake for 40-50 minutes or until a toothpick inserted in the center comes out mostly clean.
  8. Remove from oven and allow to cool completely in the pan for about 2 hours to let them set.
  9. Whisk together powdered sugar, cream cheese, and vanilla extract until thick and smooth.
  10. Pipe or spread the glaze evenly over the cooled blondies before slicing into 16 portions and serving.
