A quick and tasty Southern Pea Salad that combines sweet peas with crunchy vegetables and a creamy dressing.
Ingredients

- 2 (15 oz) cans sweet peas, drained
- 1/2 cup red onion, finely chopped
- 1/2 cup celery, finely diced
- 1/2 cup cheddar cheese, cubed or shredded
- 1/3 cup bacon bits or crumbled cooked bacon
- 1/2 cup mayonnaise
- 1 tbsp yellow mustard
- Salt & pepper to taste
Instructions
- In a large mixing bowl, combine drained sweet peas, red onion, celery, cheddar cheese, and bacon.
- In a small bowl, mix mayonnaise, mustard, salt, and pepper until smooth.
- Gently fold the dressing into the pea mixture until evenly coated.
- Cover and refrigerate for at least 1 hour before serving to let flavors meld.
Notes
- For a healthier version, consider using Greek yogurt instead of mayonnaise.
- This salad can be made a day in advance for better flavor.
