Description

Delicious Southern-Style Honey Butter Cornbread Poppers that are perfect for snacks or appetizers.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted unsalted butter
  • 1 cup sweet corn kernels (fresh or frozen)
  • 1/2 cup diced red bell pepper
  • 1/2 cup shredded cheddar cheese (sharp or mild)
  • 1/4 cup honey (for drizzling)
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin or popper pan.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, beat buttermilk, eggs, and melted butter until well combined.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Gently fold in the sweet corn, diced red bell pepper, and shredded cheddar cheese.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 15–18 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. While the poppers bake, mix softened butter and honey until smooth and creamy.
  8. Let the poppers cool slightly before removing them from the tin. Drizzle with honey butter and garnish with fresh parsley or cilantro.

  • For a spicier kick, add diced jalapeños.
  • These poppers can be served warm or at room temperature.
