Delicious Southern-Style Honey Butter Cornbread Poppers that are perfect for snacks or appetizers.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup melted unsalted butter
- 1 cup sweet corn kernels (fresh or frozen)
- 1/2 cup diced red bell pepper
- 1/2 cup shredded cheddar cheese (sharp or mild)
- 1/4 cup honey (for drizzling)
- 1/4 cup unsalted butter, softened
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin or popper pan.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, beat buttermilk, eggs, and melted butter until well combined.
- Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Gently fold in the sweet corn, diced red bell pepper, and shredded cheddar cheese.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 15–18 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- While the poppers bake, mix softened butter and honey until smooth and creamy.
- Let the poppers cool slightly before removing them from the tin. Drizzle with honey butter and garnish with fresh parsley or cilantro.
Notes
- For a spicier kick, add diced jalapeños.
- These poppers can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
