Description

Deliciously spiced apple muffins that are perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk (or milk with 1 tablespoon of vinegar added)
  • 1 1/2 cups peeled and diced apples (about 2 medium apples)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by lining it with paper liners or greasing it with cooking spray.
  3. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry mixture to the butter mixture, alternating with the buttermilk, and mix until just combined. Fold in the diced apples.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack. Dust with powdered sugar before serving.

  • For extra flavor, consider adding a handful of walnuts or pecans.
