Description

A vibrant and flavorful Spicy Thai Green Sauce that combines coconut milk and green curry paste for a bold taste.


Ingredients

  • 1/2 cup coconut milk
  • 2 tablespoons green curry paste (adjust for heat preference)
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 tablespoon brown sugar
  • 1 clove garlic, minced
  • 1 small jalapeño, seeds removed and chopped (optional for added heat)
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon soy sauce
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • Salt to taste

Instructions

  1. In a small saucepan, combine the coconut milk and green curry paste. Heat over medium heat, stirring occasionally, until the paste is well incorporated into the coconut milk.
  2. Add the fish sauce, lime juice, brown sugar, garlic, and chopped jalapeño (if using). Stir to combine and let the sauce simmer for 5-7 minutes, allowing the flavors to meld.
  3. Add the soy sauce, ground coriander, ground cumin, and salt. Stir well and taste the sauce, adjusting the seasoning as needed.
  4. Remove from heat and stir in the fresh cilantro.
  5. Let the sauce cool slightly before serving.

Notes

  • Store leftover spicy Thai green sauce in an airtight container in the refrigerator for up to 3 days.
