- 1/2 cup coconut milk
- 2 tablespoons green curry paste (adjust for heat preference)
- 1 tablespoon fish sauce
- 1 tablespoon lime juice (freshly squeezed)
- 1 tablespoon brown sugar
- 1 clove garlic, minced
- 1 small jalapeño, seeds removed and chopped (optional for added heat)
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon soy sauce
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- Salt to taste
Instructions
- In a small saucepan, combine the coconut milk and green curry paste. Heat over medium heat, stirring occasionally, until the paste is well incorporated into the coconut milk.
- Add the fish sauce, lime juice, brown sugar, garlic, and chopped jalapeño (if using). Stir to combine and let the sauce simmer for 5-7 minutes, allowing the flavors to meld.
- Add the soy sauce, ground coriander, ground cumin, and salt. Stir well and taste the sauce, adjusting the seasoning as needed.
- Remove from heat and stir in the fresh cilantro.
- Let the sauce cool slightly before serving.
Notes
- Store leftover spicy Thai green sauce in an airtight container in the refrigerator for up to 3 days.
