- 1/2 cup breadcrumbs
- 1 large egg

- 1/4 teaspoon nutmeg
- Olive oil for frying
Instructions
- Drizzle some olive oil into a large skillet and heat over medium. Add the chopped spinach and sauté for about 2-3 minutes until it wilts. Set aside to cool slightly.
- In a large bowl, blend the ricotta cheese, grated Parmesan, breadcrumbs, egg, minced garlic, salt, black pepper, and nutmeg until you achieve a smooth and cohesive mixture.
- Gently fold the sautéed spinach into the cheese mix, making sure it’s evenly combined throughout.
- Shape the mixture into small, 1-inch balls using your hands, rolling carefully to maintain their structure.
- Pour a generous amount of olive oil into a large skillet and heat over medium. Once the oil is hot, add the spinach and ricotta balls in batches, ensuring not to overcrowd the pan.
- Fry each ball for 3-4 minutes on each side, until they become golden brown and crisp.
- Place the cooked bites on a plate lined with paper towels to absorb any extra oil.

- For added flavor, you can include herbs like parsley or basil in the mixture.
