Description

Deliciously crispy and cheesy spinach and ricotta balls, perfect for appetizers or a side dish.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • Olive oil for frying

Instructions

  1. Drizzle some olive oil into a large skillet and heat over medium. Add the chopped spinach and sauté for about 2-3 minutes until it wilts. Set aside to cool slightly.
  2. In a large bowl, blend the ricotta cheese, grated Parmesan, breadcrumbs, egg, minced garlic, salt, black pepper, and nutmeg until you achieve a smooth and cohesive mixture.
  3. Gently fold the sautéed spinach into the cheese mix, making sure it’s evenly combined throughout.
  4. Shape the mixture into small, 1-inch balls using your hands, rolling carefully to maintain their structure.
  5. Pour a generous amount of olive oil into a large skillet and heat over medium. Once the oil is hot, add the spinach and ricotta balls in batches, ensuring not to overcrowd the pan.
  6. Fry each ball for 3-4 minutes on each side, until they become golden brown and crisp.
  7. Place the cooked bites on a plate lined with paper towels to absorb any extra oil.
