- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 4 large eggs
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder

- 1/4 teaspoon nutmeg
- 1/2 cup cherry tomatoes, halved
- 1 tablespoon olive oil (plus extra for greasing)
- 1/4 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with olive oil.
- In a large mixing bowl, whisk together the ricotta cheese, shredded mozzarella, eggs, milk, garlic powder, onion powder, salt, pepper, and nutmeg until you have a smooth mixture.
- Gently fold the chopped spinach and halved cherry tomatoes into the cheese and egg mixture, ensuring they are evenly distributed.
- Transfer the mixture into the greased baking dish, smoothing the top with a spatula. Evenly sprinkle the grated Parmesan cheese over the top.
- Bake in the preheated oven for 30-35 minutes, until the top turns golden brown and the center is set.
- Once baked, remove from the oven and let it cool slightly. Slice and garnish with fresh basil before serving.
