Description

A delicious and nutritious Spinach Ricotta Brunch Bake perfect for breakfast or brunch.


Ingredients

  • 2 cups of fresh spinach, chopped
  • 1 cup of ricotta cheese
  • 1 cup of mozzarella cheese, shredded
  • 4 large eggs
  • 1/2 cup of milk
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper, to taste
  • 1/4 teaspoon of ground nutmeg
  • 1/2 cup of cherry tomatoes, halved
  • 1 tablespoon of olive oil, plus extra for greasing
  • 1/4 cup of Parmesan cheese, grated
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish lightly with olive oil.
  2. In a large mixing bowl, blend the ricotta cheese, shredded mozzarella, eggs, and milk. Mix in the garlic powder, onion powder, salt, pepper, and nutmeg until everything is smooth and combined.
  3. Gently fold in the chopped spinach and halved cherry tomatoes into the mixture.
  4. Transfer the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the top with grated Parmesan cheese.
  5. Bake in the oven for 30-35 minutes until the top turns golden brown and the middle is set.
  6. Let the casserole cool slightly before serving and garnish with fresh basil leaves.
