A delicious and nutritious Spinach Ricotta Brunch Bake perfect for breakfast or brunch.

- 2 cups of fresh spinach, chopped
- 1 cup of ricotta cheese
- 1 cup of mozzarella cheese, shredded
- 4 large eggs
- 1/2 cup of milk
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- Salt and pepper, to taste
- 1/4 teaspoon of ground nutmeg
- 1/2 cup of cherry tomatoes, halved
- 1 tablespoon of olive oil, plus extra for greasing
- 1/4 cup of Parmesan cheese, grated
- Fresh basil leaves, for garnish
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish lightly with olive oil.
- In a large mixing bowl, blend the ricotta cheese, shredded mozzarella, eggs, and milk. Mix in the garlic powder, onion powder, salt, pepper, and nutmeg until everything is smooth and combined.
- Gently fold in the chopped spinach and halved cherry tomatoes into the mixture.
- Transfer the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the top with grated Parmesan cheese.
- Bake in the oven for 30-35 minutes until the top turns golden brown and the middle is set.
- Let the casserole cool slightly before serving and garnish with fresh basil leaves.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
- You can substitute the mozzarella with other cheeses if desired.
