Description

A comforting and delicious Spinach and Ricotta Pasta Bake that’s perfect for a family meal.


Ingredients

Scale
  • 9 oz penne or rigatoni
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 10 oz fresh spinach, chopped
  • 15 oz ricotta cheese
  • 1 cup grated Parmesan
  • 1 cup marinara sauce
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup shredded mozzarella

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta in salted water until al dente as per the package instructions. Drain and set aside.
  3. Warm the olive oil in a large skillet over medium heat. Add the onion and sauté for 3–4 minutes until it softens. Then, add the garlic and cook for another minute until fragrant.
  4. Add the spinach to the skillet and cook until it wilts, about 3–4 minutes. Remove from heat.
  5. In a large bowl, mix together the cooked pasta, spinach mixture, ricotta, half of the Parmesan, marinara sauce, oregano, salt, and pepper.
  6. Transfer the pasta mixture into a greased baking dish. Evenly sprinkle the remaining Parmesan and mozzarella over the top.
  7. Bake the dish uncovered for 25–30 minutes, until the cheese on top is melted and golden.
  8. Allow the dish to rest for a few minutes before serving.

  • Use whole grain pasta for a healthier option.
  • Add extra vegetables like mushrooms or bell peppers for more flavor.
  • Make it ahead of time and store in the fridge for a quick meal later.
