A comforting and delicious Spinach and Ricotta Pasta Bake that’s perfect for a family meal.

- 9 oz penne or rigatoni
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 10 oz fresh spinach, chopped
- 15 oz ricotta cheese
- 1 cup grated Parmesan
- 1 cup marinara sauce
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup shredded mozzarella
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta in salted water until al dente as per the package instructions. Drain and set aside.
- Warm the olive oil in a large skillet over medium heat. Add the onion and sauté for 3–4 minutes until it softens. Then, add the garlic and cook for another minute until fragrant.
- Add the spinach to the skillet and cook until it wilts, about 3–4 minutes. Remove from heat.
- In a large bowl, mix together the cooked pasta, spinach mixture, ricotta, half of the Parmesan, marinara sauce, oregano, salt, and pepper.
- Transfer the pasta mixture into a greased baking dish. Evenly sprinkle the remaining Parmesan and mozzarella over the top.
- Bake the dish uncovered for 25–30 minutes, until the cheese on top is melted and golden.
- Allow the dish to rest for a few minutes before serving.
Notes
- Use whole grain pasta for a healthier option.
- Add extra vegetables like mushrooms or bell peppers for more flavor.
- Make it ahead of time and store in the fridge for a quick meal later.
