Description

Spring Blossom Cookies are delightful treats infused with floral flavors and adorned with colorful sugar decorations, perfect for brightening up your dessert table.


Ingredients

  • 1 cup pink lemonade concentrate
  • 1/2 cup milk
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 tablespoons milk
  • 1/2 cup candied flower petals
  • 1/4 cup colored sugar (for decoration)

Instructions

  1. In a large mixing bowl, combine 1 cup of pink lemonade concentrate with 1/2 cup of milk.
  2. Whisk the mixture together until smooth and well incorporated.
  3. In a separate bowl, pour in 2 cups of heavy cream.
  4. Using a hand mixer or stand mixer, beat the heavy cream on medium-high speed until it begins to thicken.
  5. Gradually add 1/4 cup of powdered sugar to the heavy cream while continuing to beat.
  6. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  8. Add the softened unsalted butter and granulated sugar to a large mixing bowl and beat together until light and fluffy.
  9. Crack the large egg into the bowl and add the vanilla extract and almond extract; beat until fully incorporated.
  10. Slowly add the flour mixture into the wet ingredients on low speed until just combined.
  11. Pour in the milk and stir until blended.
  12. Gently fold in the candied flower petals.
  13. Scoop tablespoon-sized portions of dough, roll them into balls, and place on baking sheets, spacing them about 2 inches apart.
  14. Flatten each dough ball slightly and sprinkle colored sugar on top.
  15. Bake for 10 to 12 minutes or until edges are golden brown.
  16. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
