Description

Strawberry Cheesecake Crunch Bites are delightful, bite-sized desserts featuring a creamy cheesecake filling, coated in a fruity strawberry layer, and rolled in crunchy graham cracker crumbs.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream
  • 1 cup fresh strawberries, pureed
  • 1/4 cup sugar (or adjust to taste)
  • 1/4 cup cornstarch
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp sugar

Instructions

  1. In a mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
  2. Add the powdered sugar and vanilla extract, mixing until well combined.
  3. Gently fold in the whipped cream to create a light and fluffy texture.
  4. Place the cheesecake filling in the refrigerator to chill while you prepare the other layers.
  5. In a small bowl, combine the pureed strawberries with sugar, adjusting sweetness to taste.
  6. Stir in the cornstarch until fully combined.
  7. Take a small amount of cheesecake filling (about 1 tablespoon) and roll it into a ball.
  8. Place the cheesecake balls on a tray lined with parchment paper and freeze them for about 30 minutes.
  9. Remove the cheesecake balls from the freezer and dip each ball into the strawberry coating.
  10. Roll the coated cheesecake ball in the graham cracker crunch mixture until evenly coated.
  11. Return the coated bites to the parchment-lined tray and freeze for at least 1 hour to set.
  12. Serve chilled and enjoy!

Notes

  • Use fresh strawberries for the best flavor.
  • Adjust the sweetness of the strawberry coating to your preference.
  • Use parchment paper to prevent sticking during the coating process.
