Description

Ingredients

  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup fresh strawberries, chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract (for filling)
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, mix the buttermilk, melted butter, egg, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat oil in a deep fryer or large pot to 350°F (175°C).
  5. Using a piping bag or a spoon, carefully drop the batter into the hot oil, frying a few donuts at a time until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
  6. In a separate bowl, beat the softened cream cheese until smooth. Add the powdered sugar, chopped strawberries, lemon juice, and vanilla extract, mixing until well combined.
  7. Once the donuts have cooled slightly, use a piping bag fitted with a round tip to fill each donut with the strawberry cheesecake mixture.
  8. Dust the filled donuts with powdered sugar before serving.
