Description

A delightful and airy strawberry mousse topped with a delicious strawberry sauce, perfect for any occasion.


Ingredients

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, pureed
  • 1 tablespoon lemon juice
  • 1 tablespoon gelatin powder
  • 2 tablespoons water
  • 1/4 cup granulated sugar
  • 1/2 cup fresh strawberries, sliced

Instructions

  1. In a medium bowl, pour 1 cup of heavy cream and add 1/2 cup of powdered sugar.
  2. Using an electric mixer, beat the cream and sugar on medium-high speed until stiff peaks form.
  3. Set the whipped cream aside in the refrigerator to keep it cool.
  4. In a small saucepan, combine 1 tablespoon of gelatin powder with 2 tablespoons of water and allow the gelatin to bloom for about 5 minutes.
  5. Once bloomed, heat the mixture over low heat until the gelatin dissolves completely, then set it aside to cool to room temperature.
  6. In a blender or food processor, puree 1 1/2 cups of fresh strawberries until smooth, then add 1 tablespoon of lemon juice and mix until combined.
  7. Gently fold the cooled gelatin mixture into the strawberry puree.
  8. Carefully fold the strawberry mixture into the whipped cream without deflating it.
  9. Spoon the mousse mixture into individual serving cups or bowls and refrigerate for at least 2 hours until fully set.
  10. Prepare the strawberry sauce by combining 1/4 cup of granulated sugar and 1/2 cup of sliced strawberries in a small saucepan and heating over medium heat until sugar dissolves and strawberries soften.
  11. Let the strawberry sauce cool to room temperature.
  12. Drizzle the strawberry sauce over the set mousse and serve immediately or store in the refrigerator until ready to serve.

Notes

  • For a vegan option, substitute heavy cream with coconut cream and use agar-agar instead of gelatin.
  • Ensure the gelatin is fully dissolved to avoid any clumps in the mousse.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
