A simple and healthy breakfast option made with rolled oats, fresh strawberries, and yogurt, perfect for busy mornings.
Ingredients

- 1 cup rolled oats
- 1 cup milk (dairy or plant-based)
- 1/2 cup plain Greek yogurt or plant-based yogurt
- 2 tablespoons chia seeds
- 1 to 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup granola
- Additional strawberries, sliced (optional)
Instructions
- In a medium mixing bowl or mason jar, combine rolled oats, milk, Greek yogurt, chia seeds, honey or maple syrup, and vanilla extract. Mix thoroughly until fully incorporated.
- Gently fold the sliced strawberries into the oat mixture, distributing evenly throughout.
- Cover the bowl or jar and refrigerate for at least 8 hours or overnight to allow the oats and chia seeds to absorb the liquid and achieve a creamy texture.
- In the morning, stir the overnight oats well. If the mixture appears too thick, add a splash of milk to achieve desired consistency.
- Divide the prepared overnight oats evenly between two serving bowls or jars. Top each portion with granola and additional strawberry slices if desired. Serve immediately.
Notes
- Feel free to adjust the sweetness with more or less honey/maple syrup based on your taste.
- For a vegan option, use plant-based yogurt and maple syrup.
- This recipe can be prepared in advance for meal prep for the week.
