Description

A delightful dessert combining the flavors of strawberry shortcake and cheesecake in a rolled sponge cake.


Ingredients

  • 4 large eggs
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup whole milk
  • ½ cup finely chopped strawberries
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1 cup Golden Oreos, crushed
  • 2 tbsp strawberry gelatin powder
  • 2 tbsp melted butter
  • Fresh strawberries, sliced
  • Whipped cream
  • Drizzle of strawberry sauce

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease.
  2. In a bowl, beat eggs and sugar until thick and pale. Add vanilla.
  3. Sift together flour, baking powder, and salt. Gently fold into the egg mixture.
  4. Add milk and chopped strawberries, folding until smooth.
  5. Spread batter evenly into the prepared pan and bake for 10–12 minutes.
  6. Once baked, immediately roll the warm cake in a clean kitchen towel dusted with powdered sugar. Let cool completely.
  7. In a bowl, beat cream cheese and powdered sugar until smooth.
  8. In a separate bowl, whip heavy cream and vanilla until stiff peaks form.
  9. Fold the whipped cream into the cream cheese mixture until fluffy and combined.
  10. In a bowl, mix crushed Golden Oreos with strawberry gelatin powder and melted butter until crumbly.
  11. Carefully unroll the cooled cake. Spread the cheesecake filling evenly over the surface.
  12. Roll the cake back up (without the towel), then coat the outside with more filling or whipped cream.
  13. Press the crumble mixture onto the roll for that classic shortcake texture.
  14. Top with sliced strawberries, dollops of whipped cream, and a drizzle of strawberry sauce.
  15. Chill before serving for best results.
