Description

A delicious recipe for Strawberry Shortcake Cheesecake Rolls that combines the flavors of cheesecake and strawberry shortcake in a fun, rolled format.


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, diced
  • 2 tbsp granulated sugar (for strawberries)
  • 1 1/2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter, melted
  • 6 large crepes or thin cake layers

Instructions

  1. In a bowl, beat cream cheese with sugar and vanilla until smooth.
  2. In another bowl, whip heavy cream to stiff peaks and fold it into the cream cheese mixture.
  3. Toss diced strawberries with sugar and let sit for about 10 minutes.
  4. Mix crushed cookies with melted butter until crumbly.
  5. Lay a crepe flat, spread cheesecake filling, sprinkle shortcake crumbs, and add strawberries. Roll tightly into sushi shape.
  6. Chill in plastic wrap for at least an hour before slicing into pieces.
