- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, diced
- 2 tbsp granulated sugar (for strawberries)
- 1 1/2 cups crushed shortbread cookies or graham crackers
- 1/4 cup unsalted butter, melted
- 6 large crepes or thin cake layers
Instructions
- In a bowl, beat cream cheese with sugar and vanilla until smooth.
- In another bowl, whip heavy cream to stiff peaks and fold it into the cream cheese mixture.
- Toss diced strawberries with sugar and let sit for about 10 minutes.
- Mix crushed cookies with melted butter until crumbly.
- Lay a crepe flat, spread cheesecake filling, sprinkle shortcake crumbs, and add strawberries. Roll tightly into sushi shape.
- Chill in plastic wrap for at least an hour before slicing into pieces.
