Ingredients

  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 1 cup fresh strawberries, diced
  • 2 tablespoons granulated sugar for strawberries
  • 1 1/2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter, melted
  • 6 large crepes or thin cake layers

Instructions

  1. Make the cheesecake filling by beating cream cheese, sugar, and vanilla until smooth. Fold in whipped cream gently.
  2. Prepare the strawberry filling by tossing diced strawberries with sugar; let sit for 10 minutes.
  3. Combine crushed cookies with melted butter to create the shortcake crumb.
  4. Assemble by spreading cheesecake filling on a crepe, adding shortcake crumbs and strawberries, then rolling tightly.
  5. Chill rolls wrapped in plastic for at least one hour before slicing into 1-inch pieces.
