Instructions
- Make the cheesecake filling by beating cream cheese, sugar, and vanilla until smooth. Fold in whipped cream gently.
- Prepare the strawberry filling by tossing diced strawberries with sugar; let sit for 10 minutes.
- Combine crushed cookies with melted butter to create the shortcake crumb.
- Assemble by spreading cheesecake filling on a crepe, adding shortcake crumbs and strawberries, then rolling tightly.
- Chill rolls wrapped in plastic for at least one hour before slicing into 1-inch pieces.
