Instructions
- In a medium-sized saucepan, heat the heavy cream over medium heat until it begins to simmer, stirring occasionally to prevent burning.
- Once the cream begins to simmer, remove the saucepan from the heat and add the semi-sweet chocolate chips.
- Stir the mixture gently until the chocolate chips are completely melted and the cream and chocolate are fully combined into a smooth ganache.
- Chop the fresh strawberries into small, bite-sized pieces, making sure to remove any stems or leaves.
- Stir the chopped strawberries into the chocolate ganache, making sure they are evenly distributed throughout the mixture.
- Add the tablespoon of unsalted butter to the ganache and stir until it is completely melted and incorporated.
- Add the vanilla extract to the ganache and stir to evenly combine the flavors.
- Place the ganache mixture in the refrigerator for about 1 hour, or until it becomes firm enough to handle.
- Once the ganache has set and is firm enough, use a spoon or melon baller to scoop small portions of the ganache.
- Roll each portion of ganache into a ball between your hands, forming small truffles.
- Place the truffles on a baking sheet lined with parchment paper to prevent them from sticking.
- After all the truffles are shaped, sift the cocoa powder onto a plate or shallow dish.
- Roll each truffle in the cocoa powder, coating them thoroughly on all sides.
- Once the truffles are coated, place them back on the parchment paper-lined baking sheet.
- Refrigerate the truffles for at least 30 minutes to allow them to set fully.
