A delicious and easy recipe for stuffed bell peppers filled with ground beef and rice.

- 4 large bell peppers, tops trimmed, seeds and membranes removed
- 1 pound ground beef
- 1 cup cooked long-grain white rice
- 1 small yellow onion, diced
- 2 cloves garlic, finely minced
- 1 cup tomato sauce
- 1 teaspoon Italian seasoning
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef with diced onion and minced garlic, stirring, until the meat is browned and the onion is soft.
- Transfer the cooked beef mixture to a bowl. Add cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Mix until thoroughly combined.
- Arrange the prepared bell peppers upright in a baking dish. Fill each pepper evenly with the beef and rice mixture.
- Sprinkle shredded mozzarella cheese on top of the filled peppers.
- Cover the baking dish with aluminum foil and bake for 35 minutes. Remove foil and bake for an additional 10 minutes, until peppers are tender and cheese is golden.
Notes
- Feel free to customize the stuffing with your favorite spices or additional vegetables.
- For a spicy kick, consider adding diced jalapeños to the beef mixture.
- Leftovers can be stored in an airtight container in the fridge for up to three days.
