- 1.5 lbs salmon fillet, skin on or off
- 10 oz fresh spinach, washed and roughly chopped
- 4 oz feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon olive oil
- 1 lemon, zested and juiced
- Salt and freshly ground black pepper to taste
- 1/4 cup dry white wine (optional)
- 2 tablespoons butter
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Heat olive oil in a medium skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add chopped spinach and cook, stirring occasionally, until wilted (3-5 minutes). Drain excess liquid using a fine-mesh sieve.
- In a bowl, combine cooled spinach with feta, sun-dried tomatoes, Parmesan, dill, parsley, lemon zest, salt, pepper, and optional white wine. Adjust seasoning to taste.
- Remove any bones from the salmon fillet.
- Make a deep horizontal cut along the fillet to create a pocket for the filling.
- Stuff the salmon pocket with the spinach mixture.
- Season the outside of the salmon with salt, pepper, and extra lemon zest.
- Place the stuffed salmon in the prepared baking dish.
- Drizzle with 1 tablespoon lemon juice and dot with 2 tablespoons of butter.
- Bake for 20-25 minutes, or until cooked through and flakes easily with a fork. Check for doneness by inserting a fork into the thickest part.
- Let rest for a few minutes before serving.

- For a richer flavor, use a good quality feta cheese.
- Feel free to add other herbs according to your preference.
- Serve with a side of roasted vegetables or a fresh salad.
