Description

Stuffed Salmon Spinach Feta is a delicious and healthy dish, featuring salmon fillet stuffed with a savory mixture of spinach, feta cheese, sun-dried tomatoes, and herbs.


Ingredients

  • 1.5 lbs salmon fillet, skin on or off
  • 10 oz fresh spinach, washed and roughly chopped
  • 4 oz feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced
  • Salt and freshly ground black pepper to taste
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Heat olive oil in a medium skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add chopped spinach and cook, stirring occasionally, until wilted (3-5 minutes). Drain excess liquid using a fine-mesh sieve.
  4. In a bowl, combine cooled spinach with feta, sun-dried tomatoes, Parmesan, dill, parsley, lemon zest, salt, pepper, and optional white wine. Adjust seasoning to taste.
  5. Remove any bones from the salmon fillet.
  6. Make a deep horizontal cut along the fillet to create a pocket for the filling.
  7. Stuff the salmon pocket with the spinach mixture.
  8. Season the outside of the salmon with salt, pepper, and extra lemon zest.
  9. Place the stuffed salmon in the prepared baking dish.
  10. Drizzle with 1 tablespoon lemon juice and dot with 2 tablespoons of butter.
  11. Bake for 20-25 minutes, or until cooked through and flakes easily with a fork. Check for doneness by inserting a fork into the thickest part.
  12. Let rest for a few minutes before serving.

Notes

  • For a richer flavor, use a good quality feta cheese.
  • Feel free to add other herbs according to your preference.
  • Serve with a side of roasted vegetables or a fresh salad.
