Stuffed Zucchini Boats are a healthy and delicious dish filled with ground turkey, vegetables, and topped with melted mozzarella cheese.

- 4 medium zucchinis
- 1 pound ground turkey
- 1 cup diced tomatoes (canned or fresh)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup corn (fresh or frozen)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the seeds to create boats.
- In a large skillet over medium heat, add the ground turkey and cook until browned, breaking it apart with a spoon.
- Add the chopped onion and minced garlic to the skillet, cooking for an additional 3-4 minutes until the onion is translucent.
- Stir in the diced tomatoes, corn, Italian seasoning, paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
- Remove the skillet from heat and spoon the turkey mixture into the hollowed-out zucchinis, packing it in gently.
- Place the stuffed zucchinis in a baking dish and sprinkle the shredded mozzarella cheese on top.
- Bake for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
Notes
- Feel free to substitute ground turkey with ground chicken or beef.
- For a vegetarian option, use black beans or lentils instead of meat.
- Garnish with fresh parsley for added flavor and presentation.
