Description

Stuffed Zucchini Boats are a healthy and delicious dish filled with ground turkey, vegetables, and topped with melted mozzarella cheese.


Ingredients

  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 cup diced tomatoes (canned or fresh)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a large skillet over medium heat, add the ground turkey and cook until browned, breaking it apart with a spoon.
  4. Add the chopped onion and minced garlic to the skillet, cooking for an additional 3-4 minutes until the onion is translucent.
  5. Stir in the diced tomatoes, corn, Italian seasoning, paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
  6. Remove the skillet from heat and spoon the turkey mixture into the hollowed-out zucchinis, packing it in gently.
  7. Place the stuffed zucchinis in a baking dish and sprinkle the shredded mozzarella cheese on top.
  8. Bake for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
