Instructions
- Prep Your Tools and Ingredients: Preheat your oven to 350°F (175°C) and grease and line two 8-inch round cake pans with parchment paper.
- Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
- Cream the Butter and Sugar: Beat softened butter and sugar in a large bowl until light and fluffy (2-3 minutes).
- Add Eggs and Vanilla: Add eggs one at a time, beating well after each. Mix in the vanilla extract.
- Incorporate Dragon Fruit and Milk: Stir in the dragon fruit puree. Alternate adding the dry ingredients and milk to the batter, beginning and ending with the dry mixture.
- Bake the Cakes: Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely on a wire rack.
- Make the Frosting: Beat softened butter until creamy, gradually adding powdered sugar while mixing. Stir in dragon fruit puree, vanilla extract, and heavy cream (if needed) for a smooth texture.
- Assemble the Cake: Place one cake layer on a serving plate and spread a generous layer of frosting over the top. Add the second layer and frost the top and sides evenly.
- Decorate: Garnish with fresh dragon fruit slices, berries, edible flowers, and a sprinkle of dragon fruit seeds.
