Description

Ingredients

  • 1 cup mixed berries (strawberries, blueberries, raspberries, or blackberries)
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon juice
  • 12 tablespoons honey or maple syrup (optional, adjust to taste)
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. In a small saucepan over medium heat, combine the mixed berries and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the berries have softened and released their juices.
  2. Remove the saucepan from the heat and use a fork or a potato masher to mash the berries to your desired consistency (smooth or chunky).
  3. Stir in the chia seeds and optional sweetener (honey or maple syrup), if using, along with the vanilla extract until well combined.
  4. Let the mixture sit for about 10-15 minutes. The chia seeds will absorb the liquid and thicken the jam as it cools.
  5. Once the jam has thickened, transfer it to a clean jar or container. Store in the refrigerator for up to two weeks.
