Ingredients

  • 1 fresh baguette (about 12 inches)
  • 3 ripe peaches, sliced
  • 1 cup ricotta cheese
  • 2 tbsp raw honey
  • 10 fresh basil leaves, torn
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the baguette into ½-inch thick pieces and arrange them on a baking sheet.
  2. Drizzle olive oil over each slice and bake for 5-7 minutes until golden brown.
  3. While the bread is toasting, wash and slice the peaches into thin wedges.
  4. Once the bread is toasted, spread generous dollops of ricotta cheese on each slice and top with peach slices.
  5. Drizzle honey over each bruschetta and finish with freshly torn basil leaves.
  6. Serve immediately on a platter for guests to enjoy!
