A refreshing summer delight featuring ripe peaches and creamy ricotta atop toasted baguette slices.

- 1 fresh baguette (about 12 inches)
- 3 ripe peaches, sliced
- 1 cup ricotta cheese
- 2 tbsp raw honey
- 10 fresh basil leaves, torn
- 2 tbsp extra virgin olive oil
Instructions
- Preheat the oven to 400°F (200°C). Slice the baguette into ½-inch thick pieces and arrange them on a baking sheet.
- Drizzle olive oil over each slice and bake for 5-7 minutes until golden brown.
- While the bread is toasting, wash and slice the peaches into thin wedges.
- Once the bread is toasted, spread generous dollops of ricotta cheese on each slice and top with peach slices.
- Drizzle honey over each bruschetta and finish with freshly torn basil leaves.
- Serve immediately on a platter for guests to enjoy!

- For a sweeter taste, use ripe peaches.
- For added flavor, consider roasting the peaches slightly.
