Description

These Sweet Chili Chicken and Rice Bowls are a quick and delicious meal featuring marinated chicken, sautéed vegetables, and fluffy jasmine rice.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • ¼ cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 cup sliced bell peppers (any color)
  • 1 cup broccoli florets
  • ¼ cup chopped green onions
  • Sesame seeds, for garnish
  • Salt and black pepper, to taste

Instructions

  1. Prepare the rice by rinsing jasmine rice with cold water, then combining with chicken broth in a saucepan. Bring to a boil, then simmer for 15-20 minutes until cooked. Fluff with a fork and set aside.
  2. In a bowl, mix sweet chili sauce, soy sauce, sesame oil, ginger, garlic, salt, and pepper. Coat the chicken thighs in the marinade and let sit for 15-30 minutes.
  3. Heat a skillet over medium-high heat, and cook marinated chicken for 5-7 minutes on each side until fully cooked. Transfer to a plate, let rest, and slice.
  4. In the same skillet, sauté bell peppers and broccoli for 3-4 minutes until crisp-tender.
  5. Assemble the bowls by dividing the rice among them, topping with sliced chicken and sautéed vegetables, and garnishing with green onions and sesame seeds.

Notes

  • For added flavor, let the chicken marinate for up to 1 hour.
  • You can substitute any vegetables of your choice.
  • This dish can be served with extra sweet chili sauce on the side.
