Ingredients

  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (110°F)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Activate the Yeast: In a bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
  2. Mix the Dough: In a large bowl, whisk flour and salt. Add the yeast mixture and olive oil, stirring until a dough forms.
  3. Knead the Dough: Transfer to a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. First Rise: Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  5. Prepare the Filling: Mix garlic, rosemary, thyme, mozzarella, and Parmesan in a bowl.
  6. Shape the Bread: Roll out the dough into a rectangle, spread the filling, and roll tightly into a log.
  7. Slice and Arrange: Cut the log into 12 pieces and place them cut-side up in a greased baking dish.
  8. Second Rise: Cover and let rise for 30 minutes until puffy.
  9. Bake: Preheat oven to 375°F (190°C) and bake for 25-30 minutes until golden brown.
  10. Cool and Serve: Let cool slightly before serving.
