Description

A fun and easy dinner combining Tater Tots with a Sloppy Joe filling, topped with melted cheddar cheese.


Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 small green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese, divided
  • 1 (28 oz) bag frozen tater tots
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet over medium-high heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease.
  3. Add chopped onion, bell pepper, and garlic. Cook for 4–5 minutes, or until veggies are soft and fragrant.
  4. Stir in ketchup, brown sugar, mustard, Worcestershire sauce, salt, and pepper. Reduce heat to low and let simmer for 5 minutes.
  5. Sprinkle 1 cup of shredded cheddar cheese over the beef mixture and stir to combine.
  6. Arrange frozen tater tots in a single layer over the sloppy joe mixture.
  7. Bake in the preheated oven for 25–30 minutes, or until the tots are golden and crispy.
  8. Remove from oven, sprinkle the remaining 1 cup of cheese over the top, and return to oven for 5 more minutes until cheese is melted and bubbly.
  9. Garnish with chopped parsley and serve hot.

Notes

  • Feel free to add more veggies to the beef mixture for extra nutrition.
  • You can substitute ground turkey or chicken for a leaner option.
