Description

A delicious and hearty Tex-Mex Casserole that combines ground meat with layers of tortilla chips, beans, corn, and cheese, topped with sour cream and cilantro.


Ingredients

  • 1 pound ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.
  3. Add the black beans, corn, diced tomatoes, taco seasoning, and salsa to the skillet. Stir well to combine and let simmer for 5-7 minutes.
  4. In a greased 9×13 inch baking dish, layer half of the crushed tortilla chips on the bottom.
  5. Spread half of the meat mixture over the chips, followed by half of the shredded cheddar cheese.
  6. Repeat the layers with the remaining tortilla chips, meat mixture, and cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Top with sour cream and fresh cilantro before serving.

Notes

  • Feel free to add additional vegetables such as bell peppers or onions for extra flavor.
  • This can be made ahead of time and refrigerated before baking.
  • Customize the spice level by choosing different salsa or taco seasoning.
