Description
A delicious and hearty Tex-Mex Casserole that combines ground meat with layers of tortilla chips, beans, corn, and cheese, topped with sour cream and cilantro.

- 1 pound ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups tortilla chips, crushed
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.
- Add the black beans, corn, diced tomatoes, taco seasoning, and salsa to the skillet. Stir well to combine and let simmer for 5-7 minutes.
- In a greased 9×13 inch baking dish, layer half of the crushed tortilla chips on the bottom.
- Spread half of the meat mixture over the chips, followed by half of the shredded cheddar cheese.
- Repeat the layers with the remaining tortilla chips, meat mixture, and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Top with sour cream and fresh cilantro before serving.
Notes
- Feel free to add additional vegetables such as bell peppers or onions for extra flavor.
- This can be made ahead of time and refrigerated before baking.
- Customize the spice level by choosing different salsa or taco seasoning.
