Ingredients

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 can (14 oz) coconut milk
  • 2 tablespoons Thai red curry paste
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Fresh basil leaves for garnish

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, cilantro, fish sauce, lime juice, garlic powder, ginger, red pepper flakes, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat vegetable oil in a large skillet over medium heat. Add the meatballs and cook for 5-7 minutes, turning occasionally, until browned on all sides and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add coconut milk, Thai red curry paste, brown sugar, and lime juice. Stir to combine and bring to a simmer.
  5. Return the meatballs to the skillet and gently coat them in the sauce. Let simmer for an additional 5 minutes to allow the flavors to meld.
  6. Serve the meatballs hot, garnished with fresh basil leaves.
