- 1 pound ground turkey
- 1/4 cup breadcrumbs
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon ginger, grated
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- 1 can (14 oz) coconut milk
- 2 tablespoons Thai red curry paste
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- Fresh basil leaves for garnish
Instructions
- In a large bowl, combine ground turkey, breadcrumbs, cilantro, fish sauce, lime juice, garlic powder, ginger, red pepper flakes, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat vegetable oil in a large skillet over medium heat. Add the meatballs and cook for 5-7 minutes, turning occasionally, until browned on all sides and cooked through. Remove from skillet and set aside.
- In the same skillet, add coconut milk, Thai red curry paste, brown sugar, and lime juice. Stir to combine and bring to a simmer.
- Return the meatballs to the skillet and gently coat them in the sauce. Let simmer for an additional 5 minutes to allow the flavors to meld.
- Serve the meatballs hot, garnished with fresh basil leaves.
