- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon mirin or dry sherry (optional, for depth)
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 2 teaspoons cornstarch mixed with 2 tablespoons water (slurry, for thickening)
- 1/4 cup water
Instructions
- In a saucepan over medium heat, combine soy sauce, brown sugar, honey, rice vinegar, sesame oil, mirin (if using), garlic, ginger, and 1/4 cup water.
- Bring to a gentle simmer and stir until sugar is fully dissolved.
- Add the cornstarch slurry and continue to simmer, stirring constantly, until the sauce thickens, about 2–3 minutes.
- Remove from heat and let cool slightly. Use immediately or store for later.
