Ingredients

  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon mirin or dry sherry (optional, for depth)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 teaspoons cornstarch mixed with 2 tablespoons water (slurry, for thickening)
  • 1/4 cup water

Instructions

  1. In a saucepan over medium heat, combine soy sauce, brown sugar, honey, rice vinegar, sesame oil, mirin (if using), garlic, ginger, and 1/4 cup water.
  2. Bring to a gentle simmer and stir until sugar is fully dissolved.
  3. Add the cornstarch slurry and continue to simmer, stirring constantly, until the sauce thickens, about 2–3 minutes.
  4. Remove from heat and let cool slightly. Use immediately or store for later.
