- 0.5 cup powdered sugar
- 1 tsp pure vanilla extract
- 1 tbsp instant espresso powder or 2 tbsp strong brewed coffee
- 1.5 cups finely crushed ladyfingers
- 0.5 cup dark chocolate chips or chopped dark chocolate (optional for coating)
- Unsweetened cocoa powder, for dusting
- Optional: splash of coffee liqueur, white or milk chocolate for variety
Instructions
- In a medium bowl, beat mascarpone, powdered sugar, vanilla extract, and espresso powder until smooth and creamy.
- Fold in crushed ladyfingers until well combined and dough-like.
- Chill mixture for 15–20 minutes if too soft.
- Roll into tablespoon-sized balls and place on parchment-lined tray.
- Optional: Dip truffles in melted dark chocolate and return to tray.
- Dust with unsweetened cocoa powder using a fine sieve.
- Refrigerate at least 1 hour before serving.
Notes
- For the creamiest truffles, always use room temperature mascarpone.
- Add more crushed ladyfingers if the mixture is too soft to roll.
- Dust only after chilling to keep the cocoa layer from turning moist.
