- 1 large baguette or Italian loaf
- 3 ripe tomatoes, finely diced
- 4 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup olive oil
- 1 tablespoon balsamic vinegar
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
- Slice the baguette in half lengthwise and place it cut-side up on the baking sheet.
- In a bowl, combine tomatoes, garlic, basil, olive oil, and balsamic vinegar. Stir well.
- Brush the bread lightly with olive oil and toast it in the oven for 5–7 minutes.
- Remove from oven and evenly spoon the tomato mixture over the toasted bread.
- Sprinkle Parmesan cheese on top if using.
- Return to oven for 8–10 minutes, until the tomatoes soften and edges are golden.
- Cool slightly, slice, and serve warm.
Notes
- For a vegan option, omit the Parmesan cheese.
- Adjust the amount of garlic to taste.
- Make sure to use ripe tomatoes for the best flavor.
