Description

Tomato Ricotta Pasta is a creamy and delightful dish that combines the rich flavors of tomatoes and ricotta cheese, making it a comforting meal perfect for any occasion.


Ingredients

  • 200 g pasta (penne, spaghetti, or any pasta of choice)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 can (400g) crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional for a little heat)
  • Salt and black pepper to taste
  • 200 g ricotta cheese
  • 2 tablespoons freshly grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Start by cooking the pasta. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain the pasta, reserving a small cup of pasta water for later use.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and slightly golden.
  3. Add the crushed tomatoes to the skillet with the garlic. Stir well and let it simmer for 10 minutes, allowing the sauce to thicken.
  4. Stir in the oregano, basil, red pepper flakes (if using), and season with salt and black pepper to taste. Let the sauce simmer for another 2-3 minutes to blend the flavors together.
  5. Reduce the heat to low, and add the ricotta cheese to the sauce. Stir the ricotta into the sauce until it’s fully incorporated and creamy. Add a little of the reserved pasta water if you want to thin the sauce to your desired consistency.
  6. Add the drained pasta to the sauce, tossing gently to coat the pasta evenly with the creamy tomato-ricotta sauce.
  7. Sprinkle the grated Parmesan cheese over the pasta and toss once more to combine.
  8. Serve the pasta hot, garnished with fresh basil leaves if desired.
