- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 can (400g) crushed tomatoes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional for a little heat)
- Salt and black pepper to taste
- 200 g ricotta cheese
- 2 tablespoons freshly grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Start by cooking the pasta. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain the pasta, reserving a small cup of pasta water for later use.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and slightly golden.
- Add the crushed tomatoes to the skillet with the garlic. Stir well and let it simmer for 10 minutes, allowing the sauce to thicken.
- Stir in the oregano, basil, red pepper flakes (if using), and season with salt and black pepper to taste. Let the sauce simmer for another 2-3 minutes to blend the flavors together.
- Reduce the heat to low, and add the ricotta cheese to the sauce. Stir the ricotta into the sauce until it’s fully incorporated and creamy. Add a little of the reserved pasta water if you want to thin the sauce to your desired consistency.
- Add the drained pasta to the sauce, tossing gently to coat the pasta evenly with the creamy tomato-ricotta sauce.
- Sprinkle the grated Parmesan cheese over the pasta and toss once more to combine.
- Serve the pasta hot, garnished with fresh basil leaves if desired.
