- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 large green bell pepper
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon garlic powder
Instructions
- Wash the bell peppers under cold water, cut off the tops and bottoms, and remove the seeds and membranes.
- Slice each bell pepper into thin, even strips and place them in a large mixing bowl.
- Drizzle 1 tablespoon of olive oil and pour 1 tablespoon of lemon juice over the sliced peppers.
- Add 1 teaspoon of salt and 1/2 teaspoon of black pepper to the mixture, and stir gently to combine.
- Chop 2 tablespoons of fresh parsley finely, sprinkle over the peppers, and add 1 tablespoon of balsamic vinegar and 1/4 teaspoon of garlic powder.
- Stir everything together to ensure even distribution of herbs and spices.
- Taste the salad and adjust seasoning if needed, then cover and refrigerate for at least 10 minutes.
- Before serving, give the salad a gentle toss to mix everything well.

- This salad is best enjoyed chilled after marinating in the refrigerator.
