Description

A vibrant and refreshing salad made with red, yellow, and green bell peppers, perfect as a side dish.


Ingredients

  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large green bell pepper
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon garlic powder

Instructions

  1. Wash the bell peppers under cold water, cut off the tops and bottoms, and remove the seeds and membranes.
  2. Slice each bell pepper into thin, even strips and place them in a large mixing bowl.
  3. Drizzle 1 tablespoon of olive oil and pour 1 tablespoon of lemon juice over the sliced peppers.
  4. Add 1 teaspoon of salt and 1/2 teaspoon of black pepper to the mixture, and stir gently to combine.
  5. Chop 2 tablespoons of fresh parsley finely, sprinkle over the peppers, and add 1 tablespoon of balsamic vinegar and 1/4 teaspoon of garlic powder.
  6. Stir everything together to ensure even distribution of herbs and spices.
  7. Taste the salad and adjust seasoning if needed, then cover and refrigerate for at least 10 minutes.
  8. Before serving, give the salad a gentle toss to mix everything well.
