Tropical Pineapple Coconut Balls are a delicious and easy treat that combines sweet pineapple and coconut for a delightful dessert.

- 1 cup crushed pineapple (drained)
- 1 1/2 cups sweetened shredded coconut (plus extra for rolling)
- 1/4 cup sweetened condensed milk
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium mixing bowl, combine the drained crushed pineapple, 1 1/2 cups of shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and a pinch of salt. Stir until the mixture is evenly combined.
- Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes.
- Once the mixture is chilled, scoop about a tablespoon of the mixture at a time and roll it into small balls using your hands.
- In a small bowl, add extra shredded coconut. Roll each pineapple ball in the coconut until they’re fully coated.
- Pop the tray of pineapple coconut balls back into the fridge for another 30 minutes to let them firm up completely before serving.
Notes
- For easier rolling, lightly grease your hands with coconut oil or butter if the mixture is sticky.
- Make sure to drain the crushed pineapple well to prevent excess moisture.
