Description

Tzatziki Chicken Salad is a refreshing and flavorful meal made with shredded chicken, Greek yogurt, cucumber, and herbs.


Ingredients

  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • 2 cups cooked chicken, shredded or diced
  • 1 cup Greek yogurt (plain, full-fat or low-fat)
  • ½ cup cucumber, finely diced
  • ¼ cup red onion, finely chopped
  • 1 tablespoon fresh dill, chopped
  • ¼ teaspoon black pepper
  • ½ teaspoon olive oil
  • ¼ teaspoon dried oregano (optional)

Instructions

  1. In a large bowl, combine Greek yogurt, lemon juice, garlic, olive oil, dill, salt, pepper, and oregano. Stir well.
  2. Add in the cooked chicken, cucumber, and red onion. Toss until everything is coated.
  3. Cover and chill in the refrigerator for at least 30 minutes to let the flavors meld.
  4. Serve in lettuce wraps, pita bread, or over a bed of greens. Enjoy!
