  • 1 cup water
  • For the Frosting (Optional):
  • 1 ½ cups powdered sugar
  • 2 tablespoons unsalted butter (or dairy-free alternative), softened
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk (or dairy-free alternative)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
  3. Make three wells in the dry mixture. Pour vanilla extract into one, vinegar into the second, and vegetable oil into the third. Pour the water over everything and stir until smooth.
  4. Pour the batter into the prepared baking pan. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.
  5. In a bowl, beat the powdered sugar, butter, and vanilla extract together. Add milk, one tablespoon at a time, until you reach a smooth, spreadable consistency. Spread over the cooled cake and enjoy!
