Instructions
- Toast the pecan halves in a skillet until lightly golden and fragrant.
- In a medium saucepan, combine granulated sugar, brown sugar, heavy cream, unsalted butter, vanilla extract, salt, and water.
- Cook the mixture over medium heat, stirring continuously until it reaches a rolling boil.
- Continue boiling without stirring until the mixture reaches the soft-ball stage (approximately 234°F or 112°C).
- Remove from heat and add the toasted pecans, stirring until well combined.
- Let the mixture cool for about 1-2 minutes before dropping spoonfuls onto a parchment-lined baking sheet.
- Allow the pralines to set for 30-45 minutes before enjoying.
