Ingredients

  • 2 cups pecan halves
  • 1½ cups granulated sugar
  • ¾ cup light brown sugar, packed
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon salt
  • ¼ cup water

Instructions

  1. Toast the pecan halves in a skillet until lightly golden and fragrant.
  2. In a medium saucepan, combine granulated sugar, brown sugar, heavy cream, unsalted butter, vanilla extract, salt, and water.
  3. Cook the mixture over medium heat, stirring continuously until it reaches a rolling boil.
  4. Continue boiling without stirring until the mixture reaches the soft-ball stage (approximately 234°F or 112°C).
  5. Remove from heat and add the toasted pecans, stirring until well combined.
  6. Let the mixture cool for about 1-2 minutes before dropping spoonfuls onto a parchment-lined baking sheet.
  7. Allow the pralines to set for 30-45 minutes before enjoying.
